Makes 4 servings
Ingredients :
1 1/2 cups peeled and roughly chopped carrots
1/2 cup shredded spinach (palak)
1/2 cup peeled and roughly chopped potatoes
1/2 cup roughly chopped onions
2 tsp butter
1/4 cup finely chopped onions
1/2 cup milk
Salt and freshly ground black pepper powder to taste
Instruction :
1. Combine the carrots, potatoes, onions and 1½ cups of water in a pressure cooker and pressure cook for 3 whistles.
2. Allow the steam to escape before opening the lid.
3. Allow it to cool completely.
4. Once cooled blend in a mixer to a smooth paste. Keep aside.
5. Heat the butter in a kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.
6. Add the spinach, mix well and cook on a medium flame for 1 minute, while stirring continuously.
7. Add the prepared carrot-potato mixture and approx. ¼ of cup water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
8. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
9. Add the salt and pepper, mix well and boil on a medium flame for 5 to 10 minutes,while stirring occasionally.
Serve hot.
