Rajgira Paratha/ Amaranth Paratha

Ingredients 

1 1/2 cup Rajgira flour (1 1/4 cup for making the dough and the rest for rolling the parathas) Note: 1 cup = 250 ml
3 medium sized potatoes
1 inch piece of ginger peeled and chopped
2 green chillies chopped
2 tbsp fresh coriander leaves chopped
1/2 cup oil
3/4 tsp rock salt/ sendha namak or as per taste
