Kathirikai Rasavangi

Ingredients
 
Eggplants 500 grams
split pigeon peas or arhar dal 1 cup
Peanuts 1/4 cup
Jaggery 1 tbbsp
coconut grated 2 tbsp to roast and grind + 2 tbsp for tempering
coriander seeds 1 tbsp
urad dal or split black gram 1 tsp to roast and grind + 1 tsp for tempering
chana dal or split bengal gram 1 tbsp
red chilli 3 for roasting and grinding 1 for tempering
coconut oil 2 tbsp to sautee and 2 tbsp for tempering
Tamarind juice 1 cup extracted by soaking 1 lemon sized tamarind in warm water
turmeric powder 1/4 tsp
salt to taste
asafoetida or hing 1pinch
curry leaves 2tsp
