Ingredients: For 3 to 4 servings
Semolina/rava/suji: 150 grams
Onion: 1
whole measuring about 50 grams
Bengal gram/chana dal: 1 tablespoon
Peanuts: 2 tablespoons
Oil: 1 ½ tablespoon
Clarified butter/Asli ghee: 1 tablespoon
Mustard seeds (rai): 1 ½ teaspoon
Ginger garlic paste: 1 teaspoon
Salt: 1 teaspoon
Curry leaves: 1 tablespoon
Chopped coriander: 1 ½ tablespoon
Whole green chillies: 3
Lemon: ½
Procedure:
1. Roast semolina or sooji or rawa till golden brown and keep aside.
2. Roast peanuts till golden brown, peel the skin and keep aside.
3. Add oil and clarified butter or pure ghee to the pan.
4. Add mustard seeds or rai and let crackle.
5. Add bengal gram or chana dal and stir fry for 15 seconds.
6. Add roasted and peeled peanuts (you can replace peanuts with cashews).
7. Add sliced onion and stir fry till 30 seconds.
8. Add curry leaves, ginger garlic paste (you can replace ginger garlic paste with 1/2 teaspoon chopped ginger and 1/2 teaspoon chopped garlic).
9. Add salt, chopped coriander and add whole green chillies cut into 2 inch pieces.
10. Mix well. Add six hundred and fifty ml (650ml) of water.
11. Add lemon juice.
12. When the water comes to boil add roasted semolina and stir continuosly for 30 seconds so that no lumps are formed.
13. Close the lid and cook on medium flame till semolina is cooked well and till the water dries up. Upma or Semolina Porridge is ready.
