Vegetable Vermicelli Upma | Semiya Upma | Kids Lunch Box Recipe

Ingredients: Semiya / Vermicelli – 150g (I used unroasted)

Carrot - Chopped

Beans – Chopped

Onion – 1 medium

Curry Leaves

green Chilly - chopped

Ginger - thinly sliced

Mustard seeds - 1 tbsp

Urad dal - 1 tbsp

Peanuts

Cashew nuts (Optional)

Dry red chillies - 2

Oil Butter

Salt

Steps: Boil water in a pan.

Add required salt,1 tsp oil and vermicelli.

Cook covered till it boils.

Stir well and cook open till the vermicelli is cooked.

Turn off the fire and transfer to a strainer to drain out water.

Run some cold water on it to avoid sticking. Heat oil / butter in a wide pan. Add mustard seeds.

Let it splutter.

Add dry chillies and urad dal.

If you are using unroasted cashew nuts, add now.

Fry till it starts change the colour.

Add green chillies, ginger, curry leaves, onion, carrot, beans, peanuts and salt.

Saute well till it's done.

Add cooked vermicelli and mix thoroughly on low flame.

Check the taste and add salt if needed.

Add a cube of butter and cook covered for a minute.

Mix well.

Transfer to a serving bowl.
