Gulab Jamun Recipe (using khoya) | How to make Gulab Jamun

 

Ingredients

For Sugar Syrup

: 06 Cups Water(1 Litre)

03 Cups Sugar

04 Green Cardamom

06 Saffron Strands

01 tsp Rose Water

05 Drops Lime Juice

For Gulab Jamun :

250 gms Khoa (Mawa)

03 tbl Spoons All Purpose Flour (Maida)

1/2 tsp Baking Powder

01 tbl Spoon Milk

01 Litre Desi Ghee (Clarified Butter)

| How to make Gulab Jamun Preparation Method

: 1) To a skillet/utensil, add 1 Litre water, followed by Sugar, and cook at a high flame, while continuously stirring.

2) keep stirring until the sugar dissolves completely, and after 10 minutes Add 4 crushed Green Cardamom along with seeds.

3) Remove and discared the green cardamom, and add saffron strands, Rose water and cook for another 5 minutes

4) Add 5 drops of lemon juice, since lemon juice is acidic in nature it avoids the syrup to crystalize into sugar molecules.

5) Keep this sugar syrup aside, we will use it later on to dip our fried Gulab Jamuns.

6) Add Khoya to a bowl and knead it properly for 3-4 minutes and then add Maida, and knead again for 2-3 minutes.

7) Add Baking powder and milk and knead again for 2-3 minutes.

8) Make round balls of this dough, do NOT make very large balls, because when you fry the Gulab Jamuns they will inflate in size.

9) To a skillet add Ghee, maintain the flame at medium, when Ghee is hot enough reduce the flame and drop the Gulab Jamuns.

10) Make sure you keep cooking at a low flame and gently whirlpool the oil using a laddle, so that the Gulab Jamuns cook evenly.

11) Once they are all golden brown in color, extract them and store them on a paper napkin.

12) Remember : Gulab jamuns will also increase in volume when you dip them in the sugar syrup.
