Ingredients:
1 cup Khoya
3 tbsp All-purpose flour
2 tbsp Semolina
1/2 tsp Baking powder
1-2 tbsp Milk (lukewarm)
1 pinch Cardamom powder
Oil for frying
Ingredients for sugar syrup:
2 cups Sugar
3 ½ cups Water
2 Green cardamoms
1 tsp Lemon juice
1 ½ tsp Rose water
Directions:
In a bowl add khoya, flour, semolina, baking powder and cardamom powder.
Mix all these ingredients well.
Shift the mixture onto the rolling mat and knead with your palm.
Add lukewarm milk to knead smooth and soft dough if required.
Divide the dough into two halves and then further into ten equal and make small balls
. Note: make sure there’s no crack on the surface of the balls or they’ll crack open while frying. Heat oil in a pan, over medium flame. Add prepared dough balls and fry them over low to medium heat for 6 to 7 minutes or until light golden brown. Note: When oil is medium hot add a small ball of dough in hot oil and if it comes upward immediately without changing its color, oil is ready, if it turns brown immediately, ghee is too hot. And if it doesn’t come upward, oil is cold. Take out and transfer them over kitchen napkin and let cool for 5 minutes. In a pan add sugar, water, cardamom and bring it to boil on high flame. Then turn low the flame and let it simmer for 10 to 15 minutes until sticky. Add lemon juice, rose water and let it cook for 2 minutes then turn off the flame. Add fried balls into warm sugar syrup (not hot syrup) otherwise they’ll shrink. Soak them for at least one hour. Serve hot or cold.
