Spicy Potato Curry - Side dish for Chapati / Puri / Roti / Bread

Ingredients

: Boiled potato – 4

Tomato – 1 large (Chopped)

Onion- 1 medium (Chopped)

Coriander leaves

Ginger – 1 big piece (Crushed)

Green chillies (Slit open)

Turmeric powder - ¼ tbsp

Coriander powder – 2 tbsp

Red chilly powder - 1 tbsp

Garam masala – ½ tbsp + ½ tbsp

Cumin seeds – 1 tbsp

Kasuri methi

Thick coconut milk - For gravy

Salt

Oil

Steps:

Heat oil in a pan. Add cumin seeds and sauté.

Add onion, ginger and green chilly and sauté till onions become soft.

Lower the flame and add turmeric powder.

Once the raw smell goes away, add coriander powder, followed by red chilli powder, tomato, salt, ½ tbsp garam masala and coriander leaves

Cook covered on medium flame until tomatoes are done. Add mashed potatoes and coconut milk. Increase the flame

. Add some more coriander leaves, crushed kasoori methi and garam masala. Bring it to boil uncovered.

Switch off and enjoy with roti or bread or poori.
