Broccoli Soup Recipe - How To Make Healthy Broccoli Soup At Home - Ruchi Bharani

Ingredients for soup:

1 Potato, diced

1 Onion, chopped

1 Garlic

clove, cut into half

2 Cups Water

Salt to taste

200 grams Broccoli Florets

White sauce

Few strands of cheese,garnish

Ingredients for White sauce:

1 Cup MIlk

1 tbsp Corn Flour

1 tsp Butter

Method of preparation:

In a vessel add potato, onion, garlic, water, salt, and boil them for 10 minutes.

Add broccoli, give it a stir and add water if required

. Close the lid and let it cook for 4-5 minutes.

After 5 minutes check if the vegetables are cooked, switch off the flame.

Take down the vessel and let it cool for 10-15 minutes.

With the help of a hand blender blend the vegetables into a smooth puree.

Mix the broccoli stock with the white sauce.

Mix well and bring it to a boil.

Taste the soup and adjust the salt if required.

Our broccoli soup is ready to plate.

Garnish it with some few starnds of cheese, broccoli and garlic infused olive oil.

Method for White sauce:

In a sauce pan add milk, corn flour, butter, and then turn on the flame.

Keep stirring it continuiously.

Once the milk starts thickening, continuing stirring for 2 minutes and then turn off the flame.
