Kari Patta Nimki | Meethe Neem ki Mathri | kadi Patta Papdi Recipe by Priyanka Rattawa

Ingredients-

2 cups All purpose flour/maida

2 tsp Carom Seed / Ajwain Salt

1/2 tsp turmeric powder

1 tsp chili powder

4 tbsp Hot oil or ghee/clarified butter

A bunch of curry leaves

Oil for frying

How to make it-

1. Into a pan , add some oil and curry leaves. Roast it until it is light and crispy.

2. Cool it for some time and then crush the curry leaves to make a coarse powder .

3.Mix flour, salt ,ajwain, turemric , chili powder and crushed curry leaves together.

4.Add hot oil or ghee/clarified butter.Add water slowly to knead a firm dough. Keep aside covered for 10-15 minutes.

5.Make balls and roll the dough with a rolling pin into a big circle .Cut strips out of the circle.Shape triangles out of the strips as shown in the video. You can make round mathri/nimki too.

6.Fry the mathri/ nimki in medium hot oil. Keep the flame low. Fry until light browned and crisp.

7. Enjoy these crispy mini bites with a hot cup of Tea.
