Ingredients
2 cucumbers- shredded
1 green chilli- chopped
Split mustard seeds (without skin) (1 teaspoon)
Cilantro (2-3 sprigs) -chopped
Yogurt (1 cup)
Whole mustard seeds (1/2 teaspoon)
Sugar (1 tablespoon)-optional
Salt (as per taste)
Oil
Asafoetida
Tips:
1. If split mustard seeds are unavailable, whole mustard seeds can be crushed and used.
2. Some folks do not like Raita of thinner consistency. In those cases, remove water from cucumbers prior to adding them to yogurt.
3. For Gujarati-style Raita, put sugar.
4. It is a good idea to taste the cucumber(s) prior to preparing Raita as sometimes the cucumbers can be bitter.
