Ingredients: • 1 cup Rice flour • 1 tbsp Maida • Salt to taste • Water • 1/2 tsp Lemon juice • Oil Method: • Take rice flour into a bowl. • Add maida and mix well. • If you are using fresh or homemade rice flour then you don’t need to use maida. • If you use store bought rice flour then dosa gets cracks along the edges after transferring it on the pan. • To avoid that use maida for store bought rice flour. • You can use besan in place of maida too. • Add salt and mix well. • Add water and mix well. • No lumps of flour should be formed. • Add lemon juice and mix well. • The consistency of batter should neither too thick nor too thin. • It should be flowing batter. Heat up a pan on medium heat. • Spread some oil all over the pan. • Take batter and start pouring the batter along the edges first and end up at the center. • Cover and cook for just about a minute. • Open the lid and cook it for another 2-3 minutes. • Flip over and cook from other side for another 2-3 minutes. • Flip over and fold it. Transfer the dosa into a plate. • Rice flour dosa is already.
