makes 4 dosa ingredients:
for dosa batter:
1 cup sooji/rava/semolina
2 tbsp besan
salt to taste
1 1/4 cups water
for paneer schezwan dosa:
cast iron tawa
1/4 cup tomatoes, finely chopped
2 tbsp capsicum, sliced
2 tbsp coriander leaves + 1 tbsp coriander leaves
salt to taste
1/4 tsp red chilli powder
1 tsp schezwan sauce
1 tsp butter
2-3 tbsp panner, diced
1-2 tbsp cheese, grated
coconut chutney and schezwan chutney to serve
method: for dosa batter:
- take a mixing bowl and add rava, besan and salt to taste.
- mix wel. - gradually add water to make dosa batter.
- let it rest for 10 minutes, add 2-3 tbsp water if required. for paneer schezwan
dosa recipe:
- first of all I would like to say that do not use nonstick taw to make this dosa. use only cast iron tawa.
- now heat tawa and grease it with oil.
- wipe oil using tissue paper.
- sprinkle some water so that, if the tawa is heated more, its temperature will come down.
- now pour 2 paddles full of dosa batter and spread it in a circular motion to make thin and round dosa.
- now add tomatoes, capsicum, coriander leaves, salt to taste, red chilli powder, schezwan sauce and butter.
- mash well and let it cook fro 2 minutes.
- now keep mashing and spread the mixture over dosa.
- add diced paneer pieces, coriander leaves and mix well so paneer gets coat with masala mixture.
- sprinkle some cheese according to your taste.
- fold the dosa and take it in a serving plate.
- mumbai style schezwan paneer dosa is ready to serve with coconut chutney and schezwan sauce.
