Paneer reshmi Handi

Ingredients: (according to 250gm of chicken)

Boneless chicken in small pieces

1 tsp of ginger garlic paste (fresh is better)

1 tsp coriander powder

1 tsp crushed cumin

1/2 tsp garam masala

1 tsp black pepper ground

Salt to taste

1 medium onion cut in thick slices

1 capsicum cut in slices

4 green chilli finely sliced

3 tbsp oil

1 tbsp butter

1 tbsp lemon juice

Red chilli flakes

125 Gms of cream

1 heaped tbsp shredder cheddar cheese

Coal

Piece of bread

Instructions:

Heat oil and add chicken along with ginger garlic paste and fry till the chicken changes its color. Salt can be added at this point too.

Stir in the coriander powder, black pepper powder, cumin and the garam masala. let the chicken fry in these spices. Rotate them carefully occasionally. Do this for three four minutes.

After the chicken has released some juice, add both the red chilli flakes, capsicum, green pepper and onions and it cook for five minutes and chicken is tender. I Add butter and lemon juice. Dont dry out the chicken too much.

Remove from heat and heat a piece of coal till red. Put the piece of bread on the chicken and then the heated could on top of the bread. Add a drop or two of the oil and cover the pan immediately. Allow five mins to get the chicken nicely smoked. Discard the bread and coal.

Put the chicken back on very low heat and add the cheese. Allow it to melt. Add cream and remove from the heat.
