పనీర్ ధం బిర్యాని | Paneer Dum Biryani | Paneer Biryani Recipe in Telugu

INGREDIENTS

1. Basmati Rice -

2 Cups 2. Cottage Cheese - 300 Grams

3. Onions - 3

4. Curd - 1/2 Cup

5. Coriander Leaves - 1/2 Cup

6. Mint Leaves - 1/2 Cup

7. Boiled Peas - 1/2 Cup

8. Carrots - 1/2 Cup

9. Salt - 2 Teaspoons

10. Lemon Juice - 2 Tablespoons

11. Chilli Powder - 2 Teaspoons

12. Cumin Seeds Powder - 1 Teaspoon

13. Ginger Garlic Paste - 1 1/2 Teaspoon

14. Coriander Seeds Powder - 2 Teaspoons

15. Garam Masala Powder - 1/2 Teaspoon

16. Turmeric Powder -1/2 Teaspoon

17. Cinnamon Sticks - 3 Small Pieces

18. Cardamom - 3

19. Cloves - 5

20. Shahjeera -1 Teaspoon

21. Bay Leaves - 3

Soak basmati rice for 1/2 hour Here I cut 300 grams cottage cheese into pieces Fry the cottage cheese pieces This step is optional Heat 1 tablespoon oil in pan Fry the cottage cheese pieces till they brown Move them into a plate Dice the onions and fry till they turn brown They need to be deep fried Heat oil in a pan and fry onions on high flame till they turn brown Move them into a plate Cottage cheese pieces need to be marinated first To a bowl, add 1 cup curd. Beat it till it becomes smooth Add 2 teaspoons chilli powder, 1 1/2 teaspoon salt or salt to taste, 2 teaspoons coriander seeds powder, 1 teaspoon cumin seeds powder, 1/2 teaspoon garam masala powder, 1/2 teaspoon turmeric powder, 1 1/2 teaspoon ginger garlic paste and mix Add fried paneer and mix Add 2 tablespoons lemon juice and mix Add 2 tablespoons oil and mix Add 2 green chillies, 1/2 of the fried onions, 1/2 of the coriander leaves, 1/2 of the Mint leaves, boiled peas, carrots, any other vegetables and mix Let it sit for 15 minutes Letís prepare rice in the meantime Fill more than half of the pan with water Add 1/2 teaspoon salt, 1 teaspoon oil, whole garam masala and close lid Let the water boil Add soaked rice and mix Let the rice cook till up to 70% Drain off the water Take a pan with thick base Spread 2 tablespoons clarified butter (ghee) on the base of the pan Spread a layer of 1/2 of cooked rice on the bottom Add the marinated cottage cheese pieces next Add a layer of fried brown onions on top of it Add Mint leaves and coriander leaves Spread another of rice and sprinkle coriander leaves and Mint leaves Add brown onions and 2 tablespoons clarified butter (ghee) Add 1/2 cup water to the bowl used to marinate paneer and add this water the rice Close the lid tightly or put a weight on it Make a wheat flour dough and seal off any holes Heat the pan for 5 minutes on low flame Put another pan below the biryani pan after 5 minutes and cook for 10 minutes on high flame Cook for 15 minutes on low flame Cut off the stove and open the lid after 10 minutes Serve hot with gravy or raita
