Lemon Coriander Soup Recipe - How To Make Lemon & Coriander Soup - Monsoon Special - Ruchi Bharani

Ingredients:

For Stock ½ cup Cabbage, chopped

½ Carrot, chopped

1 Onion, chopped

1 Ginger, chopped

1 clove Garlic, chopped

6-7 French Beans, chopped

7-8 Bottle Gourd, pieces Coriander leaves

1 Lemon, zest

5 cups Water

For Soup

1 tsp Oil

3 tbsp Cabbage, chopped

3 tbsp Carrots, chopped

3 tbsp Corn

6-8 Spinach Leaves

Salt to taste

¼ Black Pepper

Juice of 1 Lime

Coriander Leaves, a handful

Method of preparation:

For Stock In a pot add cabbage, carrot, onion, ginger, garlic, french beans, bottle gourd, coriander, lemon zest, water and let it boil for 10-12 minutes.

Strain the stock and keep it aside.

For Soup In the same saucepan heat oil, add cabbage, carrots, corn, give it a mix. Add spinach leaves, cook the vegetables for 2 minutes, add the stock and let it boil for 2 minutes. Season it with salt, pepper, squeeze in a lime, add coriander leaves, give it a mix.

Our Lemon Coriander Soup is ready to serve.
