Ingredients
Bitter Gourd (Karela) - 1/2 Kg
Salt To Make Masala Powder
Coriander Seeds - 1 Tbsp
Cumin Seeds - 1 Tbsp
Fennel Seeds - 1 Tsp
Kalonji Seeds - 1/2 Tsp
Fenugreek - 1/4 Tsp
Amchur Powder - 1 Tbsp
Chili Powder - 2 Tsp
Turmeric Powder - 1/2 Tsp
Asafoetida Powder - 1/2 Tsp
To Make Filling
Mustard Oil - 1 Tbsp
Onion - 2 Nos Finely Chopped
Ginger Garlic Paste - 1/2 Tsp
Ground Masala Powder - 3 Tbsp
Salt - 1/2 Tsp
Sugar - 1 Tsp
Method:
Dry roast all the ingredients for the masala powder, except the spice powders Cool the ingredients and transfer them to a mixer jar Add the spice powders to the mixer and grind it to a fine powder Remove the seeds of the bitter gourds, rub salt all over the bitter gourds Let it sit for 20 mins Heat a pan with some oil, add onions, ginger garlic paste and saute well Add the masala powder and saute them well Keep the stuffing aside to cool Wash the bitter gourds a couple of times, this step is to remove the bitterness Stuff the bitter gourd with the stuffing and tie it with a twine Heat a pan with some oil, fry the bitter gourds till they turn brown in color Finally, sprinkle some of the ground masala powder on top of it and turn off the stove Serve them hot with rice or roti.
