Lauki Bharta Recipe - Lauki ki Sabzi - Bottle Gourd Recipe - Gujarati Dish

Ingredients -

3 tblsps oil

1 bay leaf (Tej patta)

1 tsp cumin seeds (Jeera)

1 tsp asafoetida (Hing)

1 tblsp garlic chutney (5 clove garlic, 11/2 tsps red chilly powder, 1/4 tsp cumin seeds, 1 pinch salt, Beat all the ingredients in a khal dasta)

1 cup green onion tops and leaves

2 grated tomatoes

1/2 tsp turmeric powder (Haldi)

1 tsp coriander and cumin powder (Dhaniya Jeera Powder)

11/2 tsps red chilly powder

Salt to taste

1/2 tsp garam masala powder

1/2 kg bottle Gourd (Lauki) (Peel and chop it and cook it in the pressure cooker with 1/2 cup water for 3-4 whistles and mesh it completely after it cools down)

1/2 cup boiled green peas (Mutter)

1 tblsp coriander leaves (For garnish)

1 tblsp green garlic (For garnish)

Method -

1) Heat oil in a pan. Add taj patta, jeera. After the jeera turns brown, add hing, garlic chutney then saute it lightly.

2) Add green onion and saute it for a minute. Add grated tomato and saute it till the oil separates. Add haldi powder, dhaniya jeera powder, salt and garam masala powder and saute lightly.

3) Add boiled and meshed lauki and mix properly. Add green peas and mix properly.

4) Add 1/4 cup water and let it cook for 2 minutes on a low flame covering the top with a lid.

5) Remove it in a serving bowl and garnish with coriander leaves and green garlic. You can have this with roti or bhakris or parathas.
