Lauki ki Sabzi Recipe
- 300 grams bottle gourd (Lauki)
1 big potato
3 tblsps oil
3/4th tsp cumin seeds (Jeera)
2 cloves (Lavang)
2 green cardamom (Elaichi)
1 stick cinnamon (Dalchini)
1 bay leaf (Tej patta)
1 tsp green chilly paste
1 tsp garlic paste
1 tsp ginger paste
1/4 tsp Turmeric powder (Haldi Powder)
2 tsp coriander seeds powder (Dhaniya powder)
1/2 tsp cumin seeds powder (Jeera powder)
1/4 tsp garam masala powder
1/2 tsp sugar
1 1/2 tsp salt (or as per taste)
1 tblsp coriander leaves
Method -
1) Heat oil in a pressure cooker, add Dalchini, Lavang, Elaichi, bay leaf, jeera. As the Jeera turns brown, add green chilly paste, garlic paste, ginger paste and mix well. Sauté lightly.
2) Add Dhaniya powder, Jeera powder, Haldi powder and mix. Add Lauki and potatoes and mix well. Add 1 1/2 tsp salt and saute for 2 minutes. Add sugar and mix. Add 1/4th - 1/3rd cup water and mix. Close the lid of the cooker and cook up to 3 whistles.
3) Open the cooker after it cools down. Switch on the gas and add garam masala and mix. Let it cook on low flame for 1 minute. Add coriander leaves and mix.
4) Remove it in a serving bowl and eat it with roti, paratha. .
