INGREDIENTS
Grated Bottle
Gourd/Lauki - 2 cups
Wheat Flour - 1 cup / 125 gms
Semolina / Sooji - 1/2 cup/ 50 gms
Bengal Gram Flour/ Besan - 3/4 cup/100 gms
Baking Soda - 1/4 tsp
Salt - as per taste
Red Chilli Powder - 1 tsp Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tblsp Roasted
Cumin Powder - 1 tsp
Asafoetida - 1/4 tsp
Ginger Chilli Paste - 1 tblsp
Lemon Juice - 2 tblsp
Oil - 4 tblsp Chopped
Coriander Leaves - 1/4 cup
Mustard Seeds - 1 tblsp
Curry Leaves - 8-10
Whole Red Chillies - 5-6
Sesame Seeds - 1 tblsp
INSTRUCTIONS
1. First fill some water in a steamer and turn on the flame.
2. In a bowl add wheat flour, besan/ bengal gram flour, sooji/semolina, baking soda, salt, red chilli powder, turmeric powder, coriander powder, roasted cumin powder, asafoetida, ginger chilli paste, lemon juice, 2 tblsp oil and mix well. Add some chopped coriander and grated bottle gourd/lauki and mix well and make a dough. Do not not add any extra water.
3. Apply oil on your hand and take a small portion of the dough. Make as many long round rolls from the dough as you can. Now its time to cook the prepared Muthias.
4. Start keeping all the muthia rolls on the stand one by one and cover it with a lid. Steam the muthia for about 25-30 minutes. Now put a fork inside the muthia to check if it is properly steamed and cooked. If the fork comes out clean, then the muthia is ready. Turn off the flame.
5. Let them cool down and then cut into thick 1/2 inch pieces.
6. For tempering heat 2 tblsp oil in a pan and add mustard seeds and let them crackle. Now add some curry leaves and whole red chillies, sesame seeds and saute for few seconds. Now add some chopped coriander leaves and steamed muthia pieces and mix well and cook it for another 5-6 min.
7. Gujarati Lauki Muthia is ready to serve . Serve it with coriander chutney or pudina chutney.
