*in a kadai heat 2 tbsp oil & add¾ tsp mustard seeds, 1/2 tsp cumin seeds, 1/2 tsp uraddal,chanadal pinch hing,few curry leaves. saute and splutter.
*add 3 tbsp peanuts saute until it turns crunchy.
*add cashew in place of peanuts to make rice tastier
*add 2 green chillies,1 small onion finely chopped,1/4 tsp turmeric.Saute until the onions turn translucent
*add 1 cup chopped cabbage, 1 small carrot grated, salt to taste.saute 5 mins or until it cooks well.
*add vegetables of your choice like capsicum, frozen green peas...
*cooked well.add chilli powder to taste.½ tsp garam masala.few coriander leaves saute on low flame for 2 mins.
*add cooked rice.mix gently. cover and simmer for 3 mins or till rice absorb spices.
*add dry rice or leftover rice to prepare this recipe.
*u can also use basmati rice.
*finally add 2 tbsp grated fresh coconut it's optional.
*serve cabbage rice with raita / any chutney or pack to your kid’s lunch box.
