REFRESHING
CARROT JUICE -
(Serves - 4)
Ingredients
10-12 carrots, peeled and cut into halves
1 tbsp finely chopped ginger
7-8 tbsps sugar
2 tbsps fresh mint leaves
1 lemon Ice cubes as required
Method
1. Heat 2 cups water in a non-stick pan. Add ginger and sugar and stir well. Let it cook till the sugar dissolves.
2. Place the carrots in a juicer and squeeze out the juice alongwith mint leaves.
3. Squeeze out juice of lemon into individual glasses, add 3 tbsps ginger sugar syrup, ice cubes and top with the carrot juice. Stir well.
4. Serve chilled.
