Cauliflower Shrimp Fried Rice
-Sauté onions and garlic with olive oil and then put to the side.
- Add 2 ½ cups of frozen cauliflower rice, 1 cup of frozen peas and carrots, and ½ cup of water to pan. Cook for 7 min. Drain water out when done.
- Add 2 TBL of olive oil to pan and cook 1 pound of shrimp. Add seasoning of choice. I added salt, pepper, garlic powder, and ginger. Cook shrimp for about 7 minutes.
- Rice should be done cooking. Drain any water and put back on heat. Begin to season your rice. I added salt, pepper, garlic powder, and ginger.
- Add onion and garlic mixture to fried rice - Push fried rice to one side and fry 2 beaten eggs and allow to scramble and then mix in fried rice.
- Add cooked shrimp to rice and mix together.
-Add ¼ cup of soy sauce, a dash of red pepper flakes, and about ½ cup of green onions to fried rice.
