Ingredients:
Cauliflower – 1 big (Finely chopped)
Egg - 4
Onion – 1 big (Finely chopped)
Green chilly (Finely chopped)
Ginger – 1 big piece (Finely chopped)
Garlic – 8 fat cloves
Curry leaves
Turmeric powder - ½ tbsp
Pepper powder - ½ tbsp
Garam Masala - ¼ tsp
Mustard seeds - ½ tbsp (Optional)
Salt
Oil
Steps:
Heat oil in a pan and add mustard seeds.
Let it splutter. Add onion, ginger, garlic, green chilly and curry leaves.
When the onion becomes soft, lower the flame and add turmeric powder.
Sauté till the raw smell goes away.
Add pepper powder, cauliflower and salt.
Cover and cook the cauliflower.
The cauliflower will release moisture when hot.
Once the gravy becomes dry, push it to the sides and add some oil in the center.
Crack in the eggs and mix well on high flame. Keep stirring.
Add garam masala. Serve the cauliflower egg fry with chapathi or rice.
