Green Fried Rice| Palak Methi (Spinach n Fenugreek leaves) Rice| Vegetarian/Vegan Recipe

Ingredients:

Palak/Spinach - 3 cups, roughly chopped;

Methi/Fenugreek leaves - 1 cup, roughly chopped;

Green peas (Frozen/boiled) - 1/4 cup;

Onions - 3/4 cup,chopped;

Garlic - 2 tbsp, finely chopped;

Ginger - 1 tbsp, finely chopped;

Lime/lemon - 1/4 wedge;

Green chillies - 1 tbsp,finely chopped;

Coriander leaves/cilantro - few twigs;

Green onion/spring onion - 2-3 twigs;

Cumin seeds/Jeera - 1tbsp;

Cooked rice - Approx. 3 cups;

Salt n pepper to taste;

Cooking oil - 2 tbsp.
