White Pumpkin Halwa | Kashi Halwa

Ingredients required are

Grated pumpkin - 4cups (I took along with the water content)

Sugar - 3/4cup; can be varied as per your taste

Ghee - 3 to 4TBSP

Cardamom powder - 1/2tsp

Soak some saffron strands in milk Cashew nuts - 3TBSP

Golden raisin - 2TBSP Preparation

-Keep a pan and turn on the stove, add a tsp of ghee

-After ghee heats up, add cashew nuts and fry for about 20-30sec

-Add golden raisin

-Fry golden raisin and cashew nuts till golden brown and transfer to a bowl -Keep the same pan and add grated white pumpkin -Cook for about 15

- 20min in medium-high heat. Do not cover lid, it will take long time for the moisture content to evaporate

-Keep mixing in-between to avoid burning -Cook until all the water content evaporates

-After 20min, take a bit and check whether it is cooked. If you get confused, after all the water content is evaporated, close lid and cook for 2 - 3min

-Open the lid, reduce the flame to medium, add sugar

-After sugar is added, it will become like semiliquid. Keep mixing. At this stage, check the sweet Level, add some sugar if required

-The mixture starts to stick to the sides -Now add saffron and ghee. Mix well, keep sautéing for about 2min

-Add cardamom powder and mix -Add fried cashew nuts and golden raisin, mix them and turn off the flame Yummy easy sweet dish White pumpkin halwa is ready.
