SWEET PUMPKIN FRITTERS
Ingredients
450 grams red pumpkin, peeled
Oil for deep-frying
½ cup grated jaggery
A pinch salt
½ cup rice flour
1 tablespoon ghee + for greasing
Method
1. Heat sufficient oil in a kadai.
2. Grate pumpkin in a bowl. Add jaggery and salt and mix well. Add flour, mix and knead into a stiff dough.Add ghee and knead again. Set aside for 15 minutes.
3. Divide the dough in equal portions.
4. Grease your palm with ghee, take each prepared portion, shape into balls and flatten into small thin discs.
5. Deep-fry in hot oil till golden and crisp. Drain in absorbent paper.
6. Serve hot. Preparation time: 12-15 minutes Cooking Time: 8-10 minutes
