Ridge gourd masala curry|Beerakaya Masala Curry|Turai masala curry

Ingredients:

Ridge gourd or beerakaya or turai-3

Chopped onion-1

Curry leaves-few

Coriander leaves finely chopped

Red chilli powder-2tbspn

Salt-1.5tbspn

Turmeric-0.5tbspn

Ginger garlic paste0.5tbspn

Cumin seeds-1tbsn

Mustard seeds-0.5tbspn

Coriander powder-0.75tbspn

Garam masala powder-0.5tbspn

Oil-3tbspn

Preparation:

First, peel ridge gourd skin and cut into small pieces. Now, heat the pan on medium flame. Add 3tbspns of oil to it. Once oil heats, add cumin seeds, mustard seeds. Once these splutter, add curry leaves. Then add chopped onions to it and mix well. Now add half table spoon of salt to it (this will make onion to become softer). And put the lid on it and cook till onion become softer. Then add turmeric, and ginger garlic paste to it. Mix once. Then add ridge gourd pieces and mix properly. Put the lid on it and cook until ridge gourd become softer (Mix in between). After few mins, add red chilli powder and cook for 7 more mins. Once ridge gourd cooked, then add coriander powder, garam masala powder and adjust the salt. Finally add finely chopped coriander leaves and give a mix.
