Ingredients:
Pudina leaves - 1 bunch
Onions - 2 medium sized
Green Chilli - 2
Boiled rice - 1 bowl
Oil - 6 to 7 spoons
Fresh Coconut (raw) - 1 small cup Ground
nuts - 3 spoon
s Curry Leaves - few
Salt - as per taste (around 1.5 spoons)
Cashew nuts - few
Urad Dal - 1 spoon
Mustard Seeds - 1 spoon
Jeera - 1/2 spoon
Tamarind - small piece
Turmeric Powder - 1/4 spoon
Red Chilli - two
Preparation
Method:
1. Take a Kadai and keep the flame in medium.
2. Once kadai is heated, add oil (1 spoon).
3. Add pudina leaves and green chilli.
4. Mix well and cook for 3 mins in medium flame, stir occasionally.
5. After 3 mins, switch-off the flame and let it cool completely.
6. Now take a mixer jar and add fresh coconut pieces , cooked pudina leaves & green chilli (once it is cooled) and add tamarind and grind it.
7. In the same kadai, add 5-6 spoons of oil, red chilli, urad dal, mustard seeds, jeera and mix well.
8. Add ground nuts, few cashew nuts and stir continuously.
9. Once mustard seeds starts spluttering, add curry leaves & chopped onions, add turmeric powder and mix nicely.
10. Cook till onions turn to golden brown color.
11. Once onions turned to golden brown, add pudina mix and mix well.
12. Cook for 1 min in medium flame.
13. After 1 min add boiled rice, add salt as per taste (1-2 spns) and mix well.
14. Cook for 5 mins in low flame, stir occasionally
15. After 5 mins, switch-off the flame. Tasty Pudina Rice (Mint rice) is ready.
