Ingredients
Milk ...................................500 ml (full cream)
Fresh cream......................200 ml
Pineapple pieces ..............2 Tbsp (finely chopped)
Powdered sugar ...............8 Tbsp ( fine)
G.M.S. powder .................1-1/2 Tbsp
Corn flour .........................1-1/2 Tbsp
Alginate powder ...............1/8 tsp
Lemon yellow food colour........ diluted in 1/4 tsp water
Pineapple essence............ few drops Measuring spoons
Method
1 . Take milk in a pan boil it, separate 8-10 Tbsp of milk in a bowl cool it. Add powdered sugar , G.M.S., alginate powder , corn flour powder , mix all the ingredients with a beater.
2. Heat up the remaining milk . slowly mix the liquid mixture ( step 1 ) in to it . stir continuously on slow flame. after 3-4 min. putt off the flame.
3. Beat the milk mixture (step 2 ) with a beater till it cools completely.
4. Take an air tight plastic container and freeze the milk mixture for 10-12 hr. in a freezer till it sets.
5. After 10-12 hr of freezing take out the ice cream soften it and beat it in a bigger bowl
6. After beating the mixture for 2-3 min. add fresh cream again beat it till it become soften..
7. Add pineapple cream , pineapple essence, again beat it .
8 Put the mixture in air tight container add lemon yellow colour (colour diluted in 1/2 tsp of water )freeze the mixture for 10-12 hr. or it sets hard.your delicious pineapple ice cream is ready.
