Mexican Style Salad | Healthy Salad Recipe | Ruchi's Kitchen

Ingredients:

1/2 Cup Kidney Beans, Soaked & Boiled

1 Corn Roasted

1/2 Red Bell Pepper

5-6 Cherry Tomatoes, Chopped

2 Tbsp Parsley, Finely Chopped

1/2 Tbsp Olive Oil

1/2 Onion, Chopped

Few Lettuce Leaves

1/2 Green Capsicum

1/2 Cucumber Sliced

Red Raddish Pickled Jalapenos

For Dressing-

1 Tbsp Olive Oil

1/2 Tsp Red Chilli Flakes

1 Tbsp Honey

Juice of 1 Lemon

1 Tsp Oregano

Method:

In a hot pan add olive oil, onions, bell peppers and toss them for 10 secs and add garlic and toss again.

- Roast a corn on medium flame

- Empty the vegetables into a bowl and cut through the roasted corn and add the corn into the salad

- Add cucumber, radish, cherries and tomatoes and lettuce leaves and jalapeños, boiled kidney beans

- In a bowl add olive oil, lime juice and honey and chilli falkes, oregano and salt and whisk all the ingredients for a minute

- Pour the dressing over the salad ingredients and mix well

- Dress up the salad with Tortilla Chips and Cheese
