Aloo Palak Paratha | आलू पालक मसाला परांठा । Potato spinach stuffed Paratha

Ingredients:

Wheat flour (गेहूं का आटा ) - 2 cups (300 gms )

Spinach (पलक ) - 300 gms

Boiled potatoes (उबले हुए आलू ) - 3 (300 gms )

Chickpea flour(बेसन ) - 2 tbsp

Oil (तेल ) - 3 to 4 tbsp

Cumin seeds (जीरा ) - 1/4 tsp

Carom seeds (अजवायन) - 1/4 tsp

Asafoetida (हिंग ) - 1 pinch

Coriander powder (धनिया पाउडर ) - 1 tsp

Red chili powder (लाल मिर्च पाउडर ) - 1/ 4 tsp

Turmeric powder (हल्दी पाउडर ) - 1/4 tsp

Green chili(हरी मिर्च ) - 2 (finely chopped )

Ginger paste (अदरक पेस्ट ) - 1 tsp

Salt (नमक ) - 1 tsp (or to taste)

Direction:

Getting Ready:

1.Take 300 gms spinach. Wash and remove the stalk. Pat dry then Make a bunch of spinach leaves. Cut the bunch in half. Then again make a bunch and chop it.

2. Take 3 boiled poatatoes,peel them.

Making:

3. Take 2 cups wheat flour in a mixing bowl, add 1/2 tsp salt, 2 tsp oil to it.Add water in small portions and knead the dough same as for paratha.We have used a little less than 1 cup water. 2 tbsp water is still left. Cover and keep the dough aside for 20 minutes.

4. To make stuffing ,heat a pan. When sufficiently hot 2 tbsp chickpea flour and roast it dry. When it changes color and it is roasted well, then take it out in the bowl.

5. Pour 2 tsp oil in a pan.When oil is sufficiently hot. Reduce flame and add 1/4 tsp carom seeds to it,1/4 tsp cumin seeds, 1 pinch asafoetida,1/4 tsp turmeric powder, 1 tsp ginger paste, 2 green chili finely chopped.Slightly roast the spices,now add chopped spinach leaves,Mix them.

6. When spices mix well, crumble and add potatoes. Then add 1/2 tsp salt, 1/4 tsp red chili powder,add 1 tsp coriander powder too. Mix it well.

7. Add roasted chickpea flour, mix again. Once ready Take out the stuffing in a plate.

8. Meanwhile heat the tawa When the dough is ready, Squash and smoothen it .Break small lump from the dough of the size of lemon, roll it out in 3 to 4 inch in diameter.

9. Once rolled out, place the stuffing over it. Do not over stuff. Leave space on the edges.

10. Close the stuffing by lifting the edges, press the edges with hands, press paratha with hands lightly to spread the stuffing. Lift the stuffed paratha and coat with dry flour.Roll out in 6 to 7 inch diameter.

11. Spread a little oil over the tawa. Put the paratha to roast on the tawa.Let the paratha roast from beneath. Prepare rest of the parathas likewise.

12. Paratha is roasted from beneath. Flip it, roast other side as well.Pour a little oil over it and spread evenly.Press edges and roast it well.

13. Parathas are roasted and ready.Lift the paratha and place it on the bowl over it, or serve it steaming hot.6 to 8 parathas can be made with this quantity of dough.

Serving :

14. Stuffed Spinach Pottato paratha are ready to be relished.You can serve curd, raita, any gravy sabzi, chutney or pickle.You can have these parathas as breakfast,lunch or dinner as desired.
