TOMATO RICE
Ingredients
3 large tomatoes, finely chopped
1½ cups basmati rice, soaked and drained
2 tablespoons ghee
1 teaspoon cumin seeds (jeera)
½ tablespoon finely chopped ginger
1 tablespoon finely chopped garlic
2 medium onions, finely chopped
Salt to taste
2 teaspoons red chilli powder
1 teaspoon garam masala powder
¾ cup green peas
2 tablespoons chopped fresh coriander leaves
Fresh coriander sprig for garnishing
Method
1. Heat ghee in a non-stick pan. Add cumin seeds and sauté till the seeds change colour.
2. Add ginger and garlic, mix and sauté well. Add onions, mix and sauté till translucent.
3. Add tomatoes and mix. Add salt, mix well, cover and cook till soft and pulpy.
4. Add chilli powder and garam masala powder, mix well, cover and cook till the fat separates.
5. Add green peas, coriander leaves, rice and 3 cups water, stir to mix, cover and cook till fully done.
6. Garnish with coriander sprig and serve hot.
