Tomato sambar

Ingredients:

Oil - 3tsp

Mustard - 1tsp

Cumin (jeera) - 1tsp

Garlic - 8 to 10 crushed slices

Curry leaves - 6 to 10

Turmeric - 1/2tsp

Tomato - 3no's

Chilli Powder - 1.5tsp

Salt - as per taste

Jaggery - 1tsp

Water - 500ml

Method to prepare:

Hear oil in a vessel, once oil gets heated up add mustard After mustard seed splutter add Jeera, Garlic, Curry leaves, Turmeric and finely chopped Tomatos, salt and jaggery. Allow the mix to get mushy and saute well until oil separates from mix. Later add 500ml of water and bring it to boiling consistency. Boil the sambar for two minutes and turn off the flame. Garnish the Sambar with freshly chopped coriander leaves.
