Squash's root recipe/ Nepali Dish/ Iskush ko Jara Ko Sabji

Ingredients

400 gm squash's root peeled cleaned n chopped in cubes

2 chopped onions

1 chopped tomato

4 to 5 pieces garlic paste

4 chopped green chilly little spring onion ( optional)

pinch of cumin seed

salt to taste

half spoon turmeric powder

half spoon red chilly powder

1 spoon cumin powder

1 spoon coriander powder

3 spoon cooking oil

Method of preparation

heat a pan put cooking oil, cumin seed, green chillies, garlic paste nad chopped onion, stir it till onion get light brown. after that add pieces of squash's root and spring onion, now cook it for 2 minutes after that add salt and turmeric powder, stir it foe few minutes and after that add cumin powder, coriander powder and red chilly powder, mix them well and cook it foe 3 to 4 minutes in low flame. once the spices are fried well with the mixture add chopped tomato and cook it till tomato gets soft. after that add a glass of water, mix it well and cook it for 3 to 4 minutes in low flame, now its ready to serve. Serve it with paratha or rice
