Instant Rice Flour Uthappam/Pancakes and Coconut-Peanut Chutney| Breakfast Recipe

Ingredients:

Rice Flour - 1 cup

Semolina (Suji/Rava) – ½ cup;

Salt – 1 tsp;

Sugar – 1 tbsp;

Plain Yogurt – ½ cup;

Cumin seeds (Jeera) – 1 tsp;

Vegetables - ¼ cup each of finely chopped onions, tomatoes, bell peppers (capsicum),

coriander leaves and grated carrots,

a tbsp each of finely chopped ginger and green chillies(optional);

Water – 1 cup approx.;

Oil

For the Chutney:

Shredded/Grated Coconut – ½ cup;

Roasted Peanuts – ¼ cup;

Green chillies – 2 or as per your preference;

Ginger – ½ inch piece;

Coriander Leaves – 1/3 cup;

Salt to taste

Water to blend the chutney
